My 2000-2007 Service Manual shows "Lubricate all hinges, locks and latches..." for the '04-05 models, but does not show the same entry for the '06-07 models. Neither does my Owner's Manual. I feel better doing it anyway, since it's required on the earlier models.

I don't why it's missing from your owner's manual. The locks and hinges haven't changed much over the model years. Doing maintenance on locks and hinges are probably not critical as it takes a very long time before you will begin to see problems. Squeaky hinges and "catchy" door locks could occur in short order but are not generally considered as mechanical break down of a part.
This sort of thing can be done at will and not necessarily at any given interval. It all depends on the amount of usage and the humidity and dustiness in the area where you drive the car. It's never a bad thing to do a bit of maintenance in these parts of the car.
White Lithium grease spray is good for the hinges. Spray a bit in and work the door, hood, trunk. This type of grease usual thickens after it has come out of the can. It sticks pretty good and doesn't drip much but you can do a casual wipe of any bad excess.
For door locks, work in a bit of silicone spray with the little straw attachment and then give the key a bit of a workout. Sometimes, on a really bad lock (not my S), I'll hold the key horizontal and put graphite all down the key on both sides and carefully slide it into the key hole and give it a few turns. This lubricates worn tumblers. I doubt the S will need this.
