How do you remove the temperature knob and the ventilation setting knob? Do they just pull off?

Yes. It's a snug fit. Use a dull flat screwdriver to pry. This will help it come straight out as you pull the whole knob. When replacing, note the orientation of the knob. It can be put back in at 180 degrees from what you want it.
