Hey Dave,
Do you have any guides written up with pictures, etc.?
I am planning some fluid changes (differential, etc.) and was wondering if you have some write ups with pics on the topic?
Also, how often should you change things like:
Differential
Tranny fluid
Radiator flush
What other key fluids (besides oil changes) should be addressed and how often?

You just need a couple tools. Primarily a pump to put th oil back in, a drain pan,the aluminum washers for the drain and fill plugs and the correct size wrench. You can get a hand pump from any auto parts store. It is also necessary for putting oil back into the transmission.

How about brakes/brake bleeds?

Yes, I've done completely DIY threads with pictures in the past for Tranny, rear diff and rad flushes, but I see that there already exists such threads here for the tranny and diff:
Both are by "Coop".

Both tranny and rear diff fluid should be changed annually or every 10K to 15K miles - more often if the car is tracked.
I see no rad flush, so I'll post something up later on this. Keep in mind that the year 2000 S2000 was the only one that had "regular" engine coolant that required the first change after 3 years, then every 2 year thereafter. All subsequent model years had "long life" antifreeze that Honda deemed to be good for the initial 10 years (although I wouldn't keep it in there for much more than 5 years).
I have not seen nor have I done any "How To's" on the brake fluid change. I do, however, have one for the clutch fluid change, which should be done every year or 2 depending upon the humidity where you live.
Although the following can't be changed, they should be at least checked to see if they are leaking: engine mounts, rear diff mounts, inner and outer CV joints. The engine and diff mount fluid is reddish and CV joint grease will look like a gooey black mess if it leaks out.
